Hand Cut Chunky Chips

- White potato 3 lge
- Vegetable oil 500 ml
- Sea salt 1 pin
Preheat the oil in a shallow thick bottomed pan. Make sure to heat the oil on a low to medium heat for approximately 20 minutes.
Wash the potatoes to remove excess dirt.
Take a very sharp knife and chop the two top parts of the potato and the the four sides. This will help to get straight fries all around.
Chop the potatoes to your desired shape.
Once the oil is hot enough add one chip first, if it starts to cook straight away you can add the rest of the chips.
Depending on the size of your saucepan you might have to do two separate batches. If you add too many potatoes to the oil it will cool it down and will take much longer to fry them.
When the potatoes are turning golden brown use a kitchen paper lined bowl to rest the chips on. This will help to soak up the excess fat. While the chips are hot sprinkle a pinch of sea salt on them.
