Overnight Apple Pie

- Grated Apple 500 g
- Cinnamon 2 tbs
- Lemon zest 1 tbs
- Fresh lemon juice 3 tbs
- Brown sugar 100 g
- Ready made shortcut pastry 1 pce
- Butter 1 tsp
- Semolina 1 tbs
- Egg 1 sm
Grate the apples and let it sit for about 10 minutes. Squeeze the excess liquid out of the grated apples and place them int a thick-bottomed saucepan along with the lemon zest, lemon juice, brown sugar and cinnamon.
Cook the apples on low heat for approximately 10-12 minutes. Taste test it and place it in a covered bowl overnight. This will help to increase the flavours by leaving it to rest.
Take a small circular shaped pan line it with butter and add in the semolina. Make sure that all sides are covered in semolina, this will prevent the pastry to stick down.
Take a premade short cut pastry roll it out and place your pie pan over it. Using the pan cut the circular shape out, then place it in the pan making sure to squish the pastry all the way to the edges of the pan.
Preheat the oven to 160 Celsius degrees.
By using a fork place inserts into the pastry and place it in the oven for 5 minutes. This will help the pastry from going soggy when we will add the apple base.
Once the pastry is out of the oven place the apple filling over it. By using a pastry cutter add decorative elements on top. Alternatively use stips of pastry over the apple base.
Whisk an egg and brush over the pastry on the top. Place the pie in the oven for approximately 10-13 minutes. Serve it with icing sugar, cream, or vanilla ice cream.
