Egg Stuffed Baked Meatloaf

- Beef mince 12% 300 g
- Onion 4 tbs
- Egg yolk 2 med
- Minced garlic 1 clv
- Salt 1 tsp
- Pepper 1 tsp
- Garlic powder 1 tsp
- Breadcrumbs 3 tbs
- Fresh chives 3 tbs
- Egg 3 med
Take a small bowl add in the beef mince and mash it a little bit. Finely chop the onion and the garlic. Add it in with the mince along with the egg yolks, chives, breadcrumb (save 2tbs for later), seasonings and give it a good mix until combined. Set it aside to rest for 20 minutes.
While the mince is resting boil the 3 eggs, peel them and set them aside.
Preheat the oven to 190 Celsius degrees. Take a large piece of cling film and add the mince in the middle.
Flatten the mince and shape it into a rectangle shape. Place the 3 eggs in the middle and roll it up by using the two edges of the cling film.
Take a baking sheet lined with baking paper. Place the meatloaf on the baking sheet with the connected side facing down so it's less likely to rib open during baking.
Sprinkle the meatloaf with the reserved breadcrumbs and spray it with a little oil. Cover it with foil and place it into the oven for 35 minutes. When the time is up remove the foil and bake for an additional 10 minutes. Serve with mashed potatoes and steamed vegetables.
