Spicy Sausage and Veg Rice

- Spicy sausage 1 pce
- Chorizo 40 g
- Basmati rice 100 g
- Bell pepper 2 sm
- Shallot 1 pce
- Vegetable oil 2 tbs
- Chicken stock cube 1 pce
- Peas 20 g
- Salt 1 tsp
- Water 350 ml
- Garlic 1 clv
Step 1
Finely chop the shallot and the garlic, add them it into a large saucepan with the vegetable oil and fry them for a minute.
Step 2
Chop the sausage and the chorizo into bite-sized chunks and add them to the onion. Brown them for 3-4 minutes.
Step 3
Slice the peppers and add them to the sausages.
Step 4
Next, add in the rice the water, and the chicken stock cube. Give it a good stir and let it simmer on low heat for 20 minutes.
Step 5
Once the 15 minutes is up add in the frozen peas along with the chopped parsley. Cover it and let it cook for an additional 5 minutes.
Step 6
Season with salt to taste and it's ready to serve.
