Spatcock Oven Baked Chicken

- Large Whole Chicken 1 lge
- Salt 1 tbs
- Oregano 1 tbs
- Smoked Paprika 1 tbs
- Garlic Powder 1 tbs
- Water 150 ml
- Lemon 1 sm
- Jerk Chicken Seasoning 1 tbs
Preheat the oven at 300 Celsius degrees
Take the chicken turn it breast down and cut the spine out.
Place the chicken facing breast upwards into a deep large baking tray.
Turn the thighs inwards. This will help the chicken to cook evenly.
Combine all the seasonings and rub it all over the chicken including the facing down section.
Place the lemon cut in half under the chicken. This will give a great aromatic taste to the meat.
Pour the water into the tray making sure not to wash the seasoning off the chicken.
Cover the tray with foil and place it into the oven for 1 hour.
After 1 hour take the foil off the chicken and bake it for another 25 minutes at 250 Celsius degrees or until the skin is nice and crispy.
