Chicken Thigh Parcels

- Chicken thigh 2 med
- French's mustard 2 tbs
- Halloumi cheese 2 pce
- Salt 1 tsp
- Pepper 1 tsp
- Thyme 1 tbs
- Garlic 1 sm
- Lemon 1 sm
- Olive oil 2 tbs
Step 1
Prepare the meat by removing the bone. once you have a flat piece of meat add on the mustard, halloumi cheese, and fresh thyme. Tightly roll up the meat then use some twine string to secure the meat.
Step 2
Preheat the oven to 190 Celcius degrees. Take a skillet add in 2 tbs of vegetable oil. Heat the pan to high heat and add in the chicken parcels. This will help to get a nice crust on the outside pre-baking. Fry each side until golden all over.
Step 3
Take a small oven-proof tray add in a few wedges of lemon, olive oil, garlic cloves cut in half, and the chicken parcels. Cover the tray with foil and bake for 25 minutes.
Step 4
Serve the parcels sliced with mashed chive potato and side of kale.
