Pan Fried Chicken with Parmesan Spaghetti Pasta

- Chicken breast with the skin on 2 med
- Salt 1 tsp
- Black pepper 1 tsp
- Vegetable oil 2 tbs
- Spaghetti pasta 80 g
- Parmesan cheese 5 tbs
- Reserved pasta water 60 ml
- Olive oil 2 tbs
- Minced garlic 1 tbs
- Parsley 1 hfl
Step 1
Take a large skillet add in 2 tbs of vegetable oil add in the chicken breast skin facing down once the pan is hot enough. Place a lid over the pan and cook for 10 minutes on low heat without moving. This way you can get a nice golden-brown crust. Repeat with the other side.
Step 2
In the meantime cook the pasta according to the packaging. Don't drain all the water reserve some for later.
Step 3
Once the pasta is cooked add in the minced garlic, salt, pepper, olive oil, parmesan cheese, reserved pasta water, and freshly chopped parsley. Give everything a good mix and let the sauce come together on low heat.
Step 4
Serve the pasta with the golden-crusted chicken and some fresh parsley.
