  • Cauliflower 500 g
  • Prawns 250 g
  • Mixed frozen vegetables 70 g
  • Egg 2 pce
  • Soy sauce 2 tbs
  • Sesame oil 2 tbs
  • Fresh lemon juice 3 tbs
  • Crushed chili 2 pin
  • Salt 1 tsp
  • Water 80 ml
  • Vegetable oil 2 tbs
Step 1

Start the cooking process by grating the cauliflower with a box grater.

Step 2

Take a large wok, add in 2 tbs of vegetable oil along with the prawns. Add some salt and chili flakes to them. Cook until they turn pinky colour. Once that's done add in the grated cauliflower. Give it a good stir add 2 tbs of sesame oil along with the soy sauce.

Step 3

Next, add in the vegetables and the water. Cover and let it simmer on low heat for 15 minutes.

Step 4

Make a well in the middle of the rice and add in the two eggs. Wait until it starts to set then use your wooden spoon to whisk them, then incorporate it with everything else. Add in the fresh lemon juice cook for another minute or two and you're good to go. Serve with a lime wedge, peanuts, sesame seeds, and fresh coriander.
