Cream of Lentils Soup


- Potato 2 med
- Lentils 200 g
- Clove of Garlic 1 med
- Onion 1 med
- Bell Pepper 1 med
- Carrot 1 med
- Salt 1 tsp
- Black Pepper 1 pin
- Vegetable Stock 2 l
Step 1
Bring the vegetable stock to a boil or if you do not have any replace with 2 Litres of Water. Chop the potatoes, carrots, onion, bell pepper, and garlic and add to the boiling pot. Simmer for about 15 minutes.
Step 2
Add the lentils and salt and cook until lentils and potatoes get soft. Add black pepper and then blend to achieve the creamy consistency.
Step 3
You may serve with a dash of cooking cream and diced cilantro on top.
