Oven Baked Pesto Chicken

- Medium Chicken Crown 1 pce
- Cherry vine tomato 9 pce
- Onion 1 sm
- Olive oil 4 tbs
- Fresh thyme 1 hfl
- Peppers 1 pce
- Salt 1 tsp
- Jerk chicken seasoning 2 tsp
- Panko breadcrumbs 5 tbs
- Paprika 1 tsp
- Olive oil 2 tbs
- Basil pesto 2 tbs
- Garlic 2 clv
- Gyro seasoning 2 tbs
Chop the onions and the garlic finely. Quarter up the cherry vine tomatoes and roughly chop the peppers. Preheat the oven to 190 Celsius degrees. Take an ovenproof baking tray and add in the olive oil, onion, garlic, cherry tomatoes, peppers, salt, and fresh thyme. Give it a good stir.
Cut the chicken crown in half and season it with jerk chicken seasoning, gyro seasoning, 1 tbs of olive oil, and some salt. Make sure to rub it into the chicken well. Place the chicken skin side up on top of the tomatoes.
Spoon 1 tbs of basil pesto on top of the chicken breasts. Take a small bowl add in the panko breadcrumbs, paprika and olive oil give it a good stir, and half the mixture on each chicken.
Cover it with foil and place it into the oven for 1 hour. After 50 minutes remove the foil and bake for another 10 minutes until the breadcrumbs turn crispy.
Enjoy it with more fresh thyme and some creamy mashed potato.
