Crepes

- Eggs 2 med
- Whole Milk 500 ml
- Lukewarm Water 200 ml
- Plain White Flour 280 g
- Corn Flour 140 g
- Salt 1 tsp
- Granulated Sugar 1 tbs
- Vegetable Oil 2 tbs
- Butter 3 tbs
- Zest of Orange 1 med
Beat the eggs with the milk and add the sugar and salt. Mix the plain and corn flour. Add half of the flour and the orange zest and combine well. You may use all plain white flour and omit the zest as well. Slowly incorporate the water, oil and butter and mix well.
Add the rest of the flour and mix until smooth. Take about one ladle worth of mixture and spread well in a dry non-stick pan. Cook until golden and flip. Once you take the crepe out, brush the edges with a bit of butter for better texture and taste.
