Cake with Cherries

- Eggs 3 med
- Butter 250 g
- Sugar 220 g
- Plain White Flour 280 g
- Vanilla 2 tsp
- Salt 1 pin
- Baking Powder 2 tsp
- Pitted Cherries 300 g
- Powdered Sugar 2 tbs
Before we begin mixing the cake batter, we need to have all of the ingredients at room temperature.
Start creaming the butter by incorporating the sugar, salt and vanilla using an electric mixer or by hand until you reach a fluffy light yellow mix. Make sure not to overdo it as the butter will start to separate, even if the sugar is not fully dissolved it will work out just fine in the end.
Beat the eggs in one at a time. Sift the flour mixed with the baking powder and gradually mix it in. You should get a smooth batter.
Pour the mixture in a lined tin. Add the cherries on top.
Bake for 30-40 minutes in a preheated oven 180 Degrees Celsius or 350F. Sprinkle the powdered sugar after you take it out of the oven and leave to cool before serving.
