  • Plain flour 500 g
  • Instant yeast 7 g
  • Luke warm water 330 ml
  • Salt 2 tsp
  • Sugar 1 tbs
  • For the everything bagel seasoning - Black sesame seeds 1 tbs

Step 1

Start making the dough by blooming the yeast. Let's do this by combining the luke warm water, sugar and instant yeast. Give everything a good stir once all hydrated let it rest for 10-15 minutes.

Step 2

In the meantime, add the flour and salt into a dough mixer. when the yeast is ready it will have a thick layer of foam on the top. While the mixer is mixing add in the yeast mixture. At medium speed let the dough come together. Once the dough has formed, place it into an oiled bowl, at a warm spot, cover it and let it double in size.

Step 3

Once the dough has doubled in size, punch the air out of it and place it on a floured surface. Knead until it forms a dough shape. Divide it into 8 equal parts. Form small tight balls from the divided sections. Once the dough balls have been formed put a hole in the middle of them using your index finger and thumb. Make sure to make the hole big enough as the dough will increase in size again later.

Step 4

Let the bagels rest for 15 minutes. In the meantime take a large saucepan fill it up with water and boil. Once the bagel has rested add them into the water. Don't overcrowd the can as they will stick together. For the perfect chewiness cook each side for 1 minute. Then place them on a baking paper-lined tray. Preheat the oven to 190 Celsius degrees.

Step 5

Take a small bowl add in one egg yolk, whip it up a little and brush each bagel well on all sides.

Step 6

To make the everything bagel seasoning combine the black sesame seeds, sesame seeds, garlic powder, poppy seeds, and salt. Sprinkle over the bagels and bake them for approximately 25 minutes flipping the tray halfway. Once the bagels are done they will have a nice golden brown colour.
