Puff Pastry Croque Madame

- Ready made puff pastry 1 pce
- Egg 6 med
- Bacon 6 pce
- Small mozzarella balls 18 pce
Preheat the oven to 190 Celsius degrees.
Line a baking sheet with baking paper. Roll out the puff pastry, cut it into 6 large equal squares. Place them on the baking tray. Poke holes on them by using a fork. Place them into the oven for 5-7 minutes or until it puffs up. This time you will be cooking it half way.
While the pastry is baking wrap the bacon into baking paper seal all sides and place them into the microwave for 3-4 minutes. Once the puff pastries are cooked halfway cooked remove them from the oven place the crispy bacon on top, along with the mozzarella balls and finally top it with a hole egg. Careful as the egg white can be runny. Season with salt and bake for an additional 10-13 minutes.
